- Using expired leavening agents — baking soda and baking powder lose potency over time, producing flat, dense results even when everything else about a recipe is followed correctly.
- Substituting ingredients without understanding their function — swapping an ingredient (butter for oil, one flour for another) without understanding what role it plays in the recipe can change the result more than expected.
