# Baking Hobby

Baking is a food hobby distinguished from general cooking by how much
it depends on precision — the chemistry of baked goods (bread, cakes,
pastries) is far less forgiving of loose measurement than most
savory cooking.

## Why precision matters more than in cooking

Baking is closer to chemistry than to freeform cooking: ratios of
flour, fat, sugar, liquid, and leavening (baking soda, baking powder,
yeast) determine texture and rise in ways that are hard to correct
after the fact. Measuring by weight (a kitchen scale) rather than by
volume (cups) produces much more consistent results, especially for
flour, which can vary significantly in weight per cup depending on how
it's scooped.

## Core techniques worth understanding

- **Creaming** — beating butter and sugar together to incorporate air,
which contributes to a cake's rise and texture.
- **Proofing** — letting yeasted dough rest so the yeast produces gas
and the dough rises; under-proofing and over-proofing both produce
  noticeably worse texture.
- **Gluten development** — kneading bread dough develops gluten
structure that gives bread its chew; the same gluten development is
something bakers deliberately minimize in tender baked goods like
  cake, by mixing gently.

## Common pitfalls

- **Measuring flour by volume instead of weight** — this is one of the
single most common sources of inconsistent baking results; a
  kitchen scale meaningfully improves reliability.
- **Opening the oven door too often** — this drops the oven
temperature and can deflate a rising cake or soufflé; resisting the
urge to check early and often matters.
- **Using expired leavening agents** — baking soda and baking powder
lose potency over time, producing flat, dense results even when
everything else about a recipe is followed correctly.
- **Substituting ingredients without understanding their function** —
swapping an ingredient (butter for oil, one flour for another)
without understanding what role it plays in the recipe can change
  the result more than expected.
